I’m so glad you’re all loving my what I ate weight loss Wednesday posts.
This morning I went for an early morning walk. When I got home I made myself this smoothie. During the week I prep little smoothie bags that I put in the freezer, so I just grabbed one of those, added some unsweetened coconut milk and blended it all up. In the smoothie bags I add, 1/2 banana, lemon slice, kale, spinach and either frozen mango or raspberries.
My smoothie didn’t contain many calories so I also had 2 weebix, some strawberries and unsweetened almond milk.
My morning snack today was a sliced pink lady apple with 25g of natural peanut butter. I’m still obsessed with this snack!!
Lunch today is a HUGE salad. When I make salads I try to add an abundance of healthy ingredients to it, because lets me real….a salad can be a little boring sometimes. So in my salad I put mixed lettuce leaves, shredded carrot & beetroot, red onion, pumpkin, tuna in spring water, sunflower seeds, brown and red rice and a tiny drizzle of lite salad cream.
It’s a bit of a late afternoon snack today and to tell you the truth, I wasn’t really that hungry. So I just had a small mandarine to see me through until dinner.
For Dinner tonight I made a chicken stir-fry. I fried chicken breast in some sesame oil, added grated carrot, peas, corn and cabbage. Then I added 1 1/2 tsp curry powder, which made it way to HOT! My hubby loved it, but I think next time I’ll add 1 tsp. Then I added some thin rice wok noodles and it was done!
After dinner I ended the night with a lemon & ginger tea
